Again, I'm going to assume that whoever this person was who was Jewish-looking, probably was at least dark-haired. Someone very blond or red-headed would doubtfully be described as Jewish-looking, it seems to me.
Unless the term was considered pejorative, and the witness was just tossing out an insult for personal reasons. But, then, more than one person said it, so maybe not.
