Rings, could just be grab whatever might be valuable just in case. Now, if you wanna go deeper, or possibly deeper, the murderer could have thought the rings were of some importance to the victim then they might have been very valuable to the murderer. Pure fanciful meandering. As far as Eddowes being concerned with the time for working rounds, it is possible of course but I think her reason for it all the more likely. When people ask why she went the direction she did I tend to think it was for drink. That being one of the most likely options. I'm advancing towards the fridge currently.
