I'm new to the forum and happened to read this post, and thought I would add my small words of wisedom from a female point of view.
Desperation's not pretty, be cool and act as if you've given up caring whether she wants to go out or not, she'll soon wonder why you're not showing her any attention!!
By the way if she just texting, emailing then she might not be single, just a thought!

I don't think thats what is going on here, let me tell you why. The longest tenured waitress at this restaurant told my Mom that they (as in the staff) are trying to get her to call me. So if shes going out with someone shes doing a good job of hiding it. This other waitress is such a great lady and is super smart, she would tell me if something is up. Also, if she wasn't interested at all ,why would she text me? She sent me the first text and not vice versa. So I think she is just shy about this process

Hey Jordan,

If you have mutual friends with her, you could also try the old "get friends to put in a good word for me" trick....if she's as keen on you as you are on her, she'll show it eventually. The key is not to appear desperate in the process.....trust me.
