I've never read a book based solely around Cutbush being the Ripper and was wondering if anyone could point me in the right direction on which, if there is a choice, is the best to read?

There's one, Jack the Myth by AP Wolf. The text is available to read free right here on the Casebook. It's a great breezy read because AP is an exceptional writer. However, there's a lot of errors in his argument for discounting Stride that have inexplicably gone uncorrected (last time I checked), so beware. But I recommend it as a read. Cutbush sorely needs a new updated volume written about him. AP, Robert Linford and others have turned up much new information in the last 15 years.
Tom has it right. As far as I know, the only book on Cutbush is Jack the Myth. I was going to suggest that you buy a copy until I checked the current prices. Yikes. It's good, but not that good. Best just to read the online version.
It seems to me that aspiring authors might want to write an updated book on Cutbush, instead of fooling around with "suspects" like Mann.
