For what its worth, I can't recall anywhere where Sagar stated that his suspect was Jewish.

He didn't, but the inferences are strong that he was.

I agree. Its unfortunate Sagars Memoirs disappeared and WW2 destroyed so much information.

What struck me about this Butchers Row suspect is that Sagar had to use a disguise in order to talk to members of the Jewish community. They had no trust or little trust in the gentile Police force.

What did this mean? you might conclude that the suspect was Jewish. It seems highly unlikely that if the suspect waa a gentile the Police would have needed a disguise or even engage the Jewish community.

The relationship to Mary Kelly and anatomical knowledge, for me anyway, is an attempt to understand the relationship to other victims and method. The Kosher method of stun-cut throat and bleed out- and gut is very similar to these murders.

Was this the reason Sagar ended up on Butchers Row? They obviously had a tip from someone. Was this the same man who had been identified at Hove or some other location?

There are missing pieces but there is also a viable theory.
