He seems to have known how to avoid blood spray and where to locate organs to the degree he needed.
I think anything beyond this is a bit of a reach and not needful. Using Occam's razor I'd go with the least possible amount of skill needed so we don't end up with suspects who seem too fanciful. I think it's best to start with native East Enders and their native trades. I think a slaughterer or knacker fits the bill well enough.
