Does anyone know what type of occupations, particularly working class occupations, traditionally didn't require their employees to work weekends or Bank Holidays in 1888?

Not sure, CD. For quite a few, it would have been a case of being paid on the day on which they found work. Not that everyone in Whitechapel worked on an "as-and-when" basis, of course.

We tend to think of the times as something pertaining to Jack himself but the times could have involved other people like the need for family to be out of the way.

Absolutely - the patterns might reveal less about him as such, as about those around him. For example, if he were a lodging-house dweller, there may have been times when his co-dossers would have been less likely to notice his absence. If, that is, they were in a position to have missed him in the first place: with so many "transients" around, this might have worked in his favour.

Speaking of patterns, it would seem that the first 2 murders established that he went back to work within a fortnight....which means that the "pattern" ends with Annie.

One constant appears to be around 3.40am on a Friday morning.
